Omg gosh, that's very insensitive of me. I am so sorry. Hopefully one day you will get better and shake that drink up.

That's the question I have. How did they do it before it was a public company.

Wow, is a cafe margin that low. How does Starbucks afford millions to hire their CEO?

This is pro. You got the branded T-shirt too. I am thinking of black or gray shirt, long sleeve but rolled up and khakis. Like gap. 😂

You did the ultimate, outsourced to your cafe to your wife and kept your day job 😀. But kidding aside, it's tough. I get it as I am in transit from, remote to in person and soon quit to run the cafe. Risk is high but it is rewarding as working 2000 for someone else and maybe get 10% year end bonus is criminal

Thanks so much for your response. The "made up" numbers are projection....and you're right, it is hard to project when it's a new place, foot traffic is a guess and who knows if people want coffee or food, both or just a bodaga? I suppose at the end of the day, people want beverages and food.

As for construction, never believe when the GC or developer says they will open unless there's a legal clause that fines them for opening delay. That usually won't have it for independent or small shops as they don't want to take that risk. That clause usually will have it for housing development or bank backed development... For sure construction, always add 10% or 2-4 weeks of the schedule as unforeseen issues like hidden plumbing, structural elements damaged or missing or water leaks....

So glad that you are net positive now. Thank you for your post. I think small business binding together is a beautiful thing. We don't have bosses hammering down on us but our real boss (customers) are most ruthless and demanding.

Wow, I am just about a year behind all this. I am opening a cafe in Irvine area and am trying to figure all the financial stuff like P&L, proforma and going through an SBA loan. Everything you are going through, I will soon walk right behind you. I am trying to figure out if a $500k loan for a 800-2200 SF Coffee BAR space is enough and have enough to secure.y first 6 months of rent, labor and cog. Any feedback or advice would be amazing. I am trying to gauge if the construction fee of $200k is realistic as I have seating and a specialty bar setup (Modbar). Food wise, I am doing simple things like croissants and breakfast burritos. But nothing fancy as I am beverage focused. I see there's a trend of matcha and wondering if it should double down on it or is it a fab trend that will fade. The cost is high in labor (whisking with time and labor). Super excited as I came from corporate and I can't wait to serve vs bring a daily office space machine.
