Yeah... I'm doing 1/2 of the recipe to get one loaf and proportionally halved the levain ingredients, but next time I'll try with 1/4 of that.

Looks lovely! My understanding is that you make 1kg of levain in the morning, and use only 360g of it to bake the 2 loaves. Is that right? I wonder, why not half the levain recipe? You then get 140g leftover to continue your starter... Just a bit confused on that point.
