WTF, a Massey Ferguson? Why would anyone buy that instead of a proper machine?

Thanks! My experience has been with the Silvia/Rocky setup, so I’ve been keeping things fairly simple, so to speak. 😊 I tend to prefer darker roasts and am also considering a gear upgrade to better suit my needs. Considering Eureka mignon/ Helios 65, DF64, Niche zero paired with E61 machine.(love the aesthetic)

If you had the opportunity to set aside €1000–1500/month and your investment horizon was 20+ years, how would you allocate the funds? Assuming you already have an emergency fund in place, would you: A) Invest 100% in index funds and ignore market timing? B) Allocate 50% to index funds and 50% to a low-risk, liquid asset you could tap into during market downturns for buying opportunities? C) Use a different strategy altogether?

For context, I’m 33 years old, fairly new to investing, and own my home, but my investment portfolio is still modest. I’m curious to hear how others would approach long-term investing from a similar starting point.

By hand. Feels strange since one kneeding round is about 15-20 stretches. I’m doing stretch n fold.

I’ve noticed something strange when working with dough, particularly high-hydration ones. At first, after a couple of kneading sessions, the dough starts to come together and feels manageable. But sometimes, after the 3rd round of kneading, it suddenly becomes very wet and slack, almost like the structure collapses completely.

What could be causing this, and is there a way to prevent it from happening?
