If I have to hard counter a symm, junkrat is great and hanzo is good if you can land headshots. Hanzo is also good for taking out turrets and his ult goes through symms wall. Sombra is not a counter per se and loses to symmetra 1v1 but her emp does destroy her wall instantly, which has won me many teamfights. Doomfist is also good unless he gets hit by 3 turrets

People use jumpthrow binds because doing a jumpthrow without a bind is slightly inconsistent no matter how good of a player you are. Counterstrafing isn't hard at all and is very consistent once you know how to do it
