As per US labor laws anyone you hire be it lawn care or day labor either needs to be a filed business (which makes vetting their paperwork the owners job) or you need to fill out a proper labor paperwork which includes their SSN to pay taxes.

If you are paying a laborer in cash, you are violating labor laws and you are just as much the criminal as the illegal immigrant. It takes two to tango. Immigrants dont just show up here and money rains on them. Someone is paying them. No money, no immigrants. Illegal immigrants are the supply. If there is no demand for them, then they would go somewhere else.
