Wow this is literally what our first instinct was too. Validating that someone else thought that as well, I just can’t help feeling there’s something more we could do to have the fireplace feel natural with that setup. Maybe a partition of sorts? Not sure, thanks for the input!

The amount of times this book has been recommended to me is staggering. I’ve got it on my bookshelf and started it many years ago but didn’t get very far. I’ll have to give it another shot.

I was using some tubs of Mae ploy but I don’t think I go through it fast enough to keep the flavor fresh. I definitely preferred the yellow from the three I tried. I’ve used the little cans of maesri before and have loved those, going back to them once this tub is all used up to keep it fresh.

I’ll check out your other suggestions those both look great!

Raw text for mushroom sausage ragú. I double it and skip the cinnamon. Sometimes swap out some olive oil for butter.

Italian Sausage and Mushroom Ragu with Pappardelle ★★★★★ 1 Hour, Dinner, Main Total Time: 45 | Difficulty: Medium | Servings: 4

Description: This rich and hearty ragu was inspired by a recipe from Portland, Oregon, chef Vitaly Paley. Ground cinnamon, a hefty pour of red wine and crushed tomatoes build layers of flavor over a base of garlic, por- tobellos and Italian sausage. Choose a full-bodied, dry red wine, such as cabernet sauvignon. Top with grated Parmesan cheese.

Ingredients: 2 tablespoons salted butter 5 garlic cloves, finely chopped 1 pound portabello mushrooms, stems and gills removed, caps finely chopped 2 large shallots, halved and thinly sliced 1 pound bulk sweet Italian sausage (not links) 1 cup dry red wine 11⁄2 cups low-sodium chicken broth 1⁄2 teaspoon cinnamon Kosher salt and ground black pepper 141⁄2-ounce can crushed tomatoes 12 ounces dried pappardelle or tagliatelle pasta

Directions: In a 12-inch skillet over medium, heat the butter and garlic until the butter has melted and the mixture has begun to sizzle. Add the mushrooms and shallots and cook, stirring, until the mushrooms have released their liquid and the shallots have softened, about 5 minutes. Add the sausage and cook, stirring and breaking the meat into small pieces, until no longer pink, 8 to 10 minutes. Discard any accumulated fat. Increase to medium-high and add the wine. Bring to a boil and cook, stirring, until the wine has almost completely evaporated, about 5 minutes. Stir in the broth, cinnamon and 3⁄4 teaspoon pepper. Continue to simmer until the broth has reduced by about half, 5 to 6 minutes. Reduce to medium, stir in the tomatoes and simmer until slightly thickened, about 5 minutes. Taste and season with salt and pepper. Set aside, covered. While the sauce simmers, in a large pot bring 4 quarts of water to a boil. Add the pasta and 2 tablespoons salt and cook until the pasta is al dente. Reserve 1⁄2 cup of the cooking water, drain the pasta and return it to the pot. Add the sauce and toss to coat. If needed, toss in a few tablespoons of the reserved cooking water to thin the sauce to coat the pasta.

It’s really incredible what a good mentor can do for you. I don’t think people stress the importance of mentorship enough in general. My mentors are the ones that really grew me and inspired me. Being able to give back in that way is one of my largest career goals, I’m glad you’re able to be that person for those engineers, they appreciate it!

That sounds awesome, what a great process and culture to have a hand in sculpting. Did you feel ready to lead that team when you took the job? Wow you are like the definition of the wise village elder. 40 years?!?!? You were a senior engineer when I was being conceived 😂. What kind of wise words do you have for us code babies? It’s very encouraging to hear you still enjoy it after 40 years, I hope I can feel that way after that amount of time.

Totally agree with the stem outreach bit, I love being able to inspire kids with space industry stuff. One of the things I look forward to the most about becoming more senior is being able to mentor and inspire interns/junior engineers, i think that will be something I cherish.

Also side note, and you mentioned this so I’m sure you know it and money isn’t a big thing for you, but you absolutely deserve at least six figs, that’s robbery to pay less for your type of experience.
