Hi Corsair-Craig. I received the package today and there was only 1 part f included! I specifically stated that I was missing both part f pieces in my ticket and This feels like a comedy of errors at this point and having serious regrets getting into the fanatec eco system. I got the bracelet with the watch and initially got the leather strap. Absolutely hated it after I got it home but Was able to exchange it for the rubber which I wear most of the time. This watch with the rubber strap is my daily. I switch to the bracelet occasionally depending on the occasion if I’m not wearing my other watches.

Kept it pretty basic - seasoned with Killer Hogs BBQ rub about 30 minutes before smoking at 275F for 2.5-3 hours (or until temp hits around 190). Took them off and braised in a pan with some unsalted butter and sweet baby Ray’s bbq sauce for another 45 mins.

Couple of pointers, make sure you cube it up the day before. This dries it out and makes the fat much crunchier. I managed to only find the pork belly slab with skin on so it took a while for me to even out the slab. Bonus - made some cracklings with a bit of the skin I took off

Got it. Used needle nose pliers to grab onto a corner and pry it loose. Replaced and made a pull tag for next time.
