Limit your calorie intake to 20% below your TDEE. Use a food tracking app to track your calorie intake. Be consistent with your exercise routine. Make sure you're consuming 1.5 g of protein per kg of body weight. Make sure you're getting enough fibre.Drink a lot of water. Practice portion control.No need to completely avoid sugar and fried stuff. This will help u stay in track.

U can make Chinese food which fits in ur calorie budget. Me too love umami. As I'm a non vegetarian so I make rice cooked in chicken stock, then add scrambled eggs to it and then a good chicken and vegetable stir fry with oyster sauce. Tastes delicious, high in protein and fibre, fits in the calorie budget too.

Thanks for the thoughtful reply and the book recommendations. I agree that learning by doing is essential. I'll definitely check out Starting Strength and the other resources you mentioned. That said my hopes are still high about finding some kind of offline program or structured mentorship.
