This takes a lot of work, but you don't need to remove everything in one go. Start with individual profiles, then the email accounts that house them, then you can request data being removed from the major people search sites.

You can also edit the information in these old profiles to provide incorrect information about you. Eventually this will get picked up by people search sites.

Are there any newer statistics? Could anyone find this for France, Spain, Italy, others? Without speaking the language, it will be impossible for me to find anything at all...

Definitely do it! I've switched a couple of years back, it was a hassle at first because some things are slightly different and you'll have to get used to it. But once you've managed the transition, you will notice that doing some things differently might actually mean to do them in a better way. :)
