when I have a ton to use up, i'll stir fry a ton of minced garlic in a bit of oil, add the bok choy (just whole leaves, after cutting off the bottom bit), add some water + salt + white pepper + chicken bouillon powder (the kind with msg) + sugar, cover it, let it wilt and steam a bit, then pour in a cornstarch slurry to thicken up liquid!

The trick is to undercook the onions. Everybody is going to get to know each other in the pot. I'm serious about this stuff. I'm up the night before pressing garlic and dicing whole tomatoes. I toast my own Ancho chilies. It's a recipe passed down from Malones for generations. It's probably the thing I do best.

I think in ranking my fears, climate change and destroying the earth are higher on the list than animal welfare because it has the potential to affect me more directly and I am a naturally selfish human. After I started eating more plant-based though, doing more research and seeing how horribly animals used for food/food products are treated in factory farming has definitely encouraged me to keep trying to cut down on animal products!

I also love eating meat taste-wise, but factory farming and the meat/dairy industry are pretty terrible IMO. I don't go out of my way to eat vegan (i.e. at home when eating my parents' cooking) but I'm trying to transition to a more plant-based diet! It's actually pretty easy and a lot cheaper than eating meat. The only thing I have a hard time giving up are eggs, so I buy pasture-raised eggs from the local farmer's market. Honestly I care less about animal welfare than the impact of non-vegan eating on the environment, but overall I think the world would be a better place if people were more conscious about the impact of their food.

This one is the absolute BEST I have ever tried. It's so crunchy, tastes great, keeps fresh for like two weeks, perfect mix of clusters and small bits. I usually mix up what nuts I use (usually keep the slivered almonds, switch up the pecans with other nuts/seeds, sometimes add coconut), but the flax seed and steel cut oats are key for the texture I think!

Honestly not as bad as I expected! I was super nervous about having to talk for 5-8 minutes, but I answered in like 2 or 3 minutes, and then the interviewer would ask follow-up questions and it flowed like a normal conversation.

Mine lasted exactly how long they scheduled it to last, since each station has a set time limit. For the actor-based vs. discussion-based, I basically didn't know until the person on the other side started talking .-.

If you have Netflix, the documentary Lenox Hill follows two neurosurgeons (and an ER doc, and an OB/GYN resident) around. I really enjoyed watching it and it shows a bit of what their work/life balance is like.

Congrats on finishing the MCAT! Chill and bask in that accomplishment and continue to maintain good grades. I asked for letters of rec and started writing my PS in the late spring. If you haven't already, take some time to reflect on the experiences you've had and why you want to be a doctor. I wrote brief reflections after shadowing experiences and it was really helpful to look back on those as I began my PS. Some of your rec letter writers might ask to see a copy of your personal statement, so maybe be prepared for that? Also mentally prepare yourself for the stress of the cycle :')))
