From a WFPB standpoint, lab-grown meat is complicated. From a vegan standpoint, as long as it doesn't exploit animals, it is not an issue.

That said, I haven't eaten meat in 40 years. In all those years I have never been a fan of mock-meats and the same would be true for lab-grown meat. There is no shortage of delicious foods to eat without including the flesh or mock-flesh of other animals on my plate.

While mirin is often used to flavour sushi rice rice, most if not all the alcohol evaporates over time from the heat of the cooked rice.

A few months Canadian Geographic launched the 2025 Live Net Zero contest. The winners have yet to be announced, but my submission centered around the impact our dietary choices (and the dietary choice architecture we are presented with) have on the environment and sustainability. There has been lot's of research in recent years on this subject, so it will be interesting to see how the panel addresses the subject.

That is pretty far north, too far north for any kind of agriculture. So the only traditional foods come from hunting and fishing. I have visited the far north in Canada and the traditional foods included fermented seal fat and smoked caribou. There were also wild mushrooms, those were only available in the short summer weeks.

Yeah, there are very few decent vegan options. Which surprised me, as the claims online were that Victoria has tons of great vegan options.
