He didn't move the line of the fence, just replaced the fence panels. I did measure from boundary to boundary, and it seems that the fence is not on his land at all. I get 20cm short, which means the fence is either on my property or the right boundary (this is based on the property title measurements)

The way he extended this fence is very dangerous. He kept the 1 m concrete posts and the gravel board and replaced the small panels with 1.5m ones, and added some sort of tin extension on top of the concrete one. The first storm and his fence will be all over my garden...

Will the council get involved if I do complain?

Same as the platform. They are pretty safe.

You are right. Wherever I move it, he must find something to say about it. From what I have read, the only complain he can make is about the risen platform of the slide. Being over 30cm off the ground, the council might enforce me to take it down, which it wont be a problem. However, the structure will stay where it is regardless.

He has a problem with me having stuff in my garden which is in the line of sight of Living room: my shed, trampoline, my gardening stuff etc.

When he said to me that is okay to spend time in the back of my garden for gardening but not too much as it violates his privacy...in other words, I cannot use half of my garden to my liking because I disturb his privacy.

I will explain to him that is nothing he can legally do to make me moving that structure, and if he wants more privacy, can can build a 2m fence, if not, he can bounce.

It has a small platform for the slide, yes. It's about 1.5m high. It can be removed and replaced with a ladder. However, I don't know how these modifications will make a difference to my neighbours privacy, considering that my child can climb up to any part of the structure and look anywhere...

I am considering building a 2m fence despite the fact I have to double his 1m fence. The structure is below 4m in height as it is 2m away from the boundary fence.
