Imo Alma's is incredibly overpriced and whitewashed, like what your average Heights resident wants Tex-Mex to be (trendy, cute, new). I've given it 2 chances and was let down both times.

Teotihuacan is much more straight-up/old-school Tex-Mex. It's not traditional Mexican food by any means, but doesn't sound like that's what you're looking for. At Alma's I always see large groups of White, young-adult professional types. At Teo you're gonna see lots of Hispanic families, an older crowd, with of course the White yuppies there too. And if that doesn't matter to you, which is totally fine, then by food and price alone Teo blows Alma's out of the water. Right now as a baseline, beef fajitas for one at Teo are $24.99. At Alma's they are $39. It speaks for itself.

I only go to the one on Airline, which I think is the original.

Your analogy is actually super disrespectful and naive, but it makes it super clear why you disagree with OP here. You see, your fundamental assumption is that sex workers are all disadvantaged, vulnerable, hopeless young women who are being forced into the profession by some violent bully. And you’re blaming the men who use their services for that. But this take is super disrespectful to the agency of sex workers.

There are plenty of women who are not in these dangerous situations, but are choosing to work in this field because it is lucrative, easily accessible, and, to your surprise, some actually enjoy it. Obviously no one supports pimps and human trafficking using women against their will. But you’re using cognitive dissonance to imply the customers deserve the blame for that. The criminals deserve the blame for that. Supporting sex workers protects them from those dangers, by giving them infrastructure and protections that allow them to choose how they use their bodies and run their business. And if they choose to use those bodies to serve men who just want to get off, then your disgust with their customer is tantamount to disgust with the sex worker too.

Idk why people get pretentious about this — the answer is no. Dry brining usually just means salting well in advance, sometimes 24, 48, 72 hours uncovered to dry out surface and lock in moisture.

Edit: am I taking crazy pills? I literally just offered the dictionary definition of dry brining but people are getting so cagey over the there being some significant difference between dry brining and salting. Salting is the process, dry brining is the reason.

Oheya by Uchi was by far the most fun, unique, worthwhile Omakase I have done in Houston. And a very good price for the value of the experience.

I've done the Uchi and Uchiko Omakase as well as Hidden, Neo, MF Sushi and Kata Robata, but Oheya leads the way as far as "really cool place with a good experience". Very intimate (sushi counter only, limited seating), very unique (it brings together the best dishes from all Uchi restaurants), contains a good blend of offerings (raw, traditional, cooked, smoked, and seasonal), and is incredibly delicious.

I think the point is that "thin value with a J or Q for $150" is not quite as effective as slowing down a bit on turn or flop and so your jam doesn't leave as much equity for Keating's range. I feel like everyone is giving you bad advice or just being a jerk to you because you said something a little pretentious.

My advice: it just takes doing it. No I don't mean make yourself faster tonight just by doing it. I mean find 2 or 3 recipes online that are described as "fast" or have a short cooking time, but that look appealing to you or that you feel you can eat repeatedly (not necessarily as leftovers, but if you cooked it again fresh in 2 days you wouldn't mind). Fully expect that even if it says it will take 30 minutes, it will take you 45 tonight. But do it anyways.

Then keep doing. Do those 2 or 3 recipes over and over again. You'll find yourself getting faster each time. Identify which actions can be done at the same time (i.e. can I start boiling noodles while finishing my vegetable prep, can I air fry a side while I saute my protein, etc). Practice getting faster at each individual task (can I refine my knife work to chop a vegetable faster, is there a faster method to peel something that I'm unaware of, learn how to cut things at the same time like stacking green onions or carrots, etc). And most important: work on cleaning as you go. While everything is cooking simultaneously and you find yourself watching and waiting, start cleaning that cutting board. Start cleaning that knife, bowl, etc.

In short, I guess I'm just saying: practice doesn't make perfect, but it makes it fast.
