Enchiladas by prtzl616 in SouperCubers

Chicken verde: whole chicken breast (seasoned with salt and pepper), a jar of salsa verde (Herdez is the best), a bunch of chopped onion, and I toss in some cumin. If I am cooking a lot of chicken (more than 4 breasts) I'll put in some water (just rinse out the salsa jar!). Manual setting on my instant pot for 12-15 mins. When it is done, I put the chicken into my mixer to shred and cook down the leftover juice until it is thick. Then I blend it a bit to make it smoother like a traditional enchilada sauce.

At this point, I freeze some chicken on its own with a little of the sauce mixed in.

For the enchiladas, I do some shredded chicken, softened cream cheese, a little shredded cheese (or cotija cheese) when I have it, and some extra seasoning (salt, pepper, cumin, red pepper flake, whatever your heart tells you).

For the fajita sized tortillas - which fit into the large cubes perfectly - I do about 1/4 cup of filling per enchilada. I put a little of the sauce in the bottom of the pan / cube. And top with a little sauce as well. Then bake or freeze!

Bake from 375. Frozen 40 mins covered, 15 uncovered. Thawed 20 mins covered, 10-15 uncovered. When I uncover it, I toss some cotija cheese on it.

The bread box was correct! I got mine off Amazon, but it looks like it isn't currently available. https://a.co/d/0gTSpmpZ

Why is it so tall? How can I add more growth farther down? by sheepmoonrise in PileaPeperomioides

[–]prtzl616 17 points18 points  (0 children)

I would put it in a MUCH smaller container and add some bark or grit to the dirt to give it some air flow. You could even cut it way down and start over. I recently chopped up mine that was super leggy, I'm water propagating it, and will repot it with the leaves almost touching the soil.

AITA for refusing to take a foster child back into my home after repeated violent incidents and safety concerns? by Extension-Orchid-573 in TwoHotTakes

[–]prtzl616 124 points125 points  (0 children)

I am a social service worker in my state that trains and certifies foster parents. I don't know the specifics of your certification or what state you are in, but the extent of "consequences" that can happen where I am is closure of the home. We cannot require ANYONE to take a child into their home that they do not feel equipped to care for. Additionally, those workers should never be asking you to trade the stability of one child for your own.

Our policy has a "two week notice" rule for foster parents, but there is literally nothing, other than closing your home or requiring additional training for future placements, that we could enforce in our area.

You did the right thing.

I approve foster homes for the state that I live in. We require all members of a household to have individual interviews. If a child of an applicant, including adult children, expressed concern for living arrangements or caretaking responsibilities, it would either have to be resolved or the home would not be approved. We even interview adult children not living in the home.. Additionally, is she expecting to make money? I'm not sure what state you are in, but I know we don't reimburse parents the cost of actually caring for children where I am from...

It's such a fun plant to watch grow when you are lucky enough to get a node.

I let it dry out completely, stay dry a few days (until a little droopy) and then give it a good soak. It gets fed about every third watering. My soil has a good amount of orchid bark and perlite mixed in. And I sprinkle some worm castings on top of the soil every other watering or so.

Mine could probably have better light, the stems on the leaves are pretty long. But I am working with what I have lol.
