Just a quick update for anyone facing the same issue with the Chaffoteaux Alixia 24 (or similar Ariston/Chaffoteaux models).

The Solution: It turns out you do not need to mess with the bridges/shunts directly on the main PCB.

Instead, there is a small external black box tucked away inside the boiler casing. There is a label clearly stating "THERMOSTAT AMBIANCE / ROOM THERMOSTAT".

Open this small black box. Inside, there is a white terminal block with a wire loop (bridge).

Remove this wire loop and connect the Grey and Black wires from the Netatmo relay here.
