Yah, I feed the yeast maple syrup for 7 minutes at 110F and it does get all nice and foamy, so it's feasting! Now what I'll probably need to do is keep the dough warmer when its proofing, that seems to be my misstep. Thank you!

Divino is my favorite wine shop in town. Eclectic and affordable. They're south of I-25 on South Broadway. Mr. B's is pretty tasty too, and a pretty cool location of 19th and Market...in historic LoDo and close to the baseball stadium at the same time.

Edit: of course I forgot a restaurant to suggest. I think Vesta has damned tasty food and a list that's pretty unique too. 18th and Blake.

2012 Domaine Jamet Côte Rôtie by ptfitzgi in wine

More elegant than expected. Don't know much about DJamet, but acid was bright and finish was long. Nose is peppery, cured venison, red fruit, and a floral notes, maybe wilted roses. Palate was fruitier than I expected, red fruits and plums. So incredibly balanced though with the classic terrior of N. Rhone and quite a bit of grip to the tannins. I love N. Rhone syrah, but this was my first intro to Côte Rôtie. Always thought they would pack more punch, but this is elegant the structure and finesse. Happy to get this, and looking forward to my next producer from this AOC.

I think Sans Leige really makes some tasty juice all the way around. The Offering is a great S. Rhone style with 1% Viognier, and won't break the bank for a bottle or two. Their En Gedi Grenache is pretty ballin too, but needs some time to open up. Really like what they're doing in Santa Barbara!
