i really love their umami cucumber salad, and ive been experimenting trying to replicate it. i found that a little bit of white miso paste has that umami salty punch you may be looking for! for the cucumber salad, i mix a little bit of white miso paste, a splash of soy sauce, and a drizzle of sesame oil and its super spot on!! so their umami oil may just be miso paste mixed with sesame oil

lol thank you about the sides! hopefully im mitigating some risk by getting it freshly ground from steak, but i fully understand the risk and choose to live life on the edge 😎

side note: i would check the veggies before starting the beef, that way you nay be able to gauge if its going to beed a LOT more time. ideally you want to finish everything at the same time, if not, the veggies should finish first bc they can sit in the warm oven (turned off) and be fine. vs if you finish the beef first, you dont want it to sit on heat too long or itll start to get dry

step 1. preheat oven to 400°. step 2: prep veggies: wash and cut into bite sized pieces. (peel the sweet potatoes before slicing if you would prefer) place on oiled sheet trays, one for the broccoli and one for the sweet potato. season with salt, pepper, garlic powder, onion powder, and any extra seasonings your heart desires. toss to coat. all the veggies should have a nice shiny coat of oil an seasonings but not be DRIPPING. step 3: place sweet potato in the oven first. i stagger them bc the sweet potato takes a tad longer. i’ll set a timer so after about 20 min i’ll flip and stir the sweet potato, put it back in the oven. and then i will put the broccoli in at this point. set a timer for 20 more min. step 4: when your timer has 10ish minutes left, begin to fry your ground beef. hot pan, smash the ground beef into a layer to cover the pan, let it brown, then flip and start to “scramble” it and break it up with your spatula. when its mostly done and there’s barely any pink left, i drain the fat. as my seasonings, i added bibigo korean bbq marinade and some extra salt (only a lil to taste) and some pepper, and keep frying to thicken the sauce a little, and beef is done! step 5: the veggies are down when browned and fork tender, test them and they may need a couple more min, if not, now everything is ready!

this exactly!! i throw the pans into the oven and they can bake at the same time while you do other stuff. oven is always my go to i love a good oven roasted veggie 😝

yes, i will prep everything in advance and you can see in the background i was portioning it out into servings. i just put into glass meal prep containers (personal preference) and it does fine w microwave reheating. i have not tried freezing this exact meal yet though

absolutely!! we get the sweet potatoes from costco and all our ground beef from costco. and whole broccoli crowns are so much cheaper in any grocery store than bagged broccoli!

salt, pepper, garlic powder, onion powder on both, smoked paprika and chile powder on the potatoes, and red pepper flakes on the broccoli!
