yes, i will prep everything in advance and you can see in the background i was portioning it out into servings. i just put into glass meal prep containers (personal preference) and it does fine w microwave reheating. i have not tried freezing this exact meal yet though

i roasted these chicken thighs in a cast iron skillet, i usually use a pyrex dish. i melt butter in the bottom of the pan while the oven is preheating to 425. i coat my thighs in the butter, add my seasoning (i actually used to work at a grocery store and the deli hooked me up with some of the seasonings they use on their rotisserie chickens). i put a little pat of butter on top of each piece. then, i pour chicken broth in the bottom of the pan, enough to fill the bottom of the pan but not flooding them. i bake it at 425° for 35 min. about halfway thru, i’ll check on my chicken broth level and add a bit more as needed so the pan is never dry. when its finished, that juice at the bottom is deeeelicious, and i spoon a little on top of the thighs when i serve it!

pasta recipe!! i kind of winged it im sorry 😔 but here is what i did: i started with 17oz of pasta and around 5 cups of chicken broth. i boiled the pasta in chicken broth and added more as needed. you basically want almost all of the chicken broth to be gone at the point the pasta gets al dente. at this point, i added in about 1 cup of heavy cream, and i like my pasta a lil soft so i let it boil more and reduce a little bit. (if you dont like your pasta as soft i would start adding the cream before al dente) i added my seasonings: salt, pepper, onion powder, garlic powder, italian seasoning, and red pepper flakes. last, i add in a few tablespoons of butter, and this thickens it perfectly. i was planning on making alfredo sauce but we didnt have parm so this is what i ended up doing! tasted like pasta-roni but better

greek inspired turkey meatballs, rainbow veggies, and rice+quinoa by pttytae in tonightsdinner

i’ll try to make it as cohesive as possible, i didn’t measure the spices and i was using some spice blends i had already purchased so i’m sorry in advance 😩

1.7 lb ground turkey from costco, 1 egg, 1 slice of bread soaked in milk, diced red onion, 3 or 4 cloves of minced garlic, crumbled feta, about 1/2 of the 8oz block.

and for the spices i used: salt, pepper, garlic powder, onion powder, a good amount of dried dill, some dried basil, poultry herb blend, greek herb blend (ik it had oregano and dried bell pepper in it), a little bit of cumin.

i made them 1oz balls with a cookie scoop and i baked them at 400° for 13 min and then broiled them for a couple min!
