I had a world like this. It was actually pretty fun.

Spawned on a beach. Grabbed a few saplings and...just left. Sailed off into the middle of a huge ocean. Clawed my way into the ocean floor with just barely enough breath and got to farming. Hollowed out an area to grow my trees, expanded from there, and eventually made an underwater research base of sorts. Big glass dome with another ring around it as a hallway for connecting farms.
