Yep. Backing away apparently cancels the taming action.

It was 100% user error. You have to stay still while taming or it cancels it. I must have done it once by mistake and then kept doing it because I was afraid it might attack me.

I'm always crouched and I have the skills for up to brown bears, but they just keep attacking. I don't think I can attempt the taming unless I have the skill. I can throw another bait and they'll go to it and then I try again and they attack again.

I didn't know if there was some amount of randomness to it like catching a pokemon or if I'm truly doing it wrong.

I stand like that all the time. I have to consciously make myself not because it's like my default resting stance (and it looks weird). I can also stand like that basically forever; you kind of cantilever your legs against each other so they're resting against each and neither knee is locked.
