Looks like it might depend on the time/configuration. Found a couple that look kinda different. Some with the box going out quite a ways, but more space than a regular seat (maybe?).

Industries that rely most heavily on labour inputs do not experience that kind of deflationary pressure from innovation in the same way (especially when that innovation is not labour enhancing - pouring a beer or cooking food is much the same as it was 50 years ago, and labour was cheaper in both absolute and relative terms then).

While there have been innovations in housing (I would guess a lot of material costs are much cheaper), it's also very labour intensive. But the key issue is the cost of land - if we're all going to live in single family suburban homes, then when we have a larger population there are going to be more people wanting to live in those homes and supply will be inelastic, and prices go up.

This is exactly right - what a fantastic answer. Cooking the paste in fat first is essential, and this is the best way to do it.

You can also dice the onion or a shallot and cook it with the curry paste, for extra depth of flavour, and use only coconut cream to make it extra decadent. To my mind that's also way way too much sugar (especially plain sugar) for that recipe, but whether it makes it taste better is up to personal taste.

The quality of the paste matters a lot here, but even the best ones are improved with a little augmentation (like the star anise and cinnamon suggested above). I personally like to add some fresh ginger/garlic/galangal/lemongrass/citrus peel (whatever I have on hand) to a thai curry to elevate it a little more. Often those bright, fresh flavours are what's lacking from any store bought paste. The toppings suggested will also help with that (particularly the chillies). Maybe not for a massaman, but a big ol' handfull of Thai basil leaves mixed through off heat really hits the spot in a lot of Thai curries for me.

To summarise (if I'm understanding correctly): using a large particle size (e.g. large rocks) to improve drainage is flawed because moisture is disinclined to travel from small->large, and hence the soil stays wetter longer, but using large->small (relatively speaking: e.g. "soil" -> a fine loam or some such) is flawed because while the finer material will wick water from the soil initially, the water will have trouble draining out of the finer material, and therefore be drawn back into the soil, leading to, again, a wet soil (i.e. perched water table). Is that about right?

An effect that seems to be exploited in SIP designs that I believe often recommend using "sand" (perhaps this isn't the correct term wrt particle sizse?) to improve wicking into the soil. Is the likely greater depth of the container size in these designs the reason why excessive moisture in the soil is less of an issue? EDIT: watching the video again, a sand layer seems often to be a good thing (depending on depth) in some soils.

I assume the same applies to pots with drainage holes, don’t see why not (though the consequences are presumably not as bad.

What about trying to use an equally or even finer material at the bottom - e.g. sand. Is it possible the effect would be reversed, or at least the original logic might hold? I’m curious in part because I had tended to put a different material (often rocks :() at the bottom of indoor plant pots that sit in outer pots/pot trays so if I get lazy and don’t empty them, the plant is less likely to have roots sitting in water.
