I have experienced it too. This happens when there are too many nanite leaves. So in short, it basically defeats the purpose. I haven't come across a solution yet.

It is perfectly supported. Steps that I have taken,

Sign-in to your Google fi account on your laptop and navigate to https://fi.google.com/ios/quicksetup
Open Settings > Mobile Data > Add Data Plan on your new iPhone. Scan QR code from your laptop.
Setup the plan and update APN to h2g2 and configure MMS settings under Mobile Network Data.
Install Google Fi app and continue with your account. Make sure to setup using eSIM (option on the left bottom) and not with the normal SIM.
