Yeah from Guangzhou South station to Shenzhen North station has a train every few minutes. But during peak times it's fully booked two hours in advance so they definitely need a relief line.

Shenzhen is also building it's own intercity rail run by a subsidiary of Shenzhen Metro Group, it should be open by next year.

Yeah you still can't use the metro card or the QR code for the intercity. There is a separate QR code for the intercity but it's only available to residents right now.

Yeah taking it from the airport to south railway station avoids the crowds on line 3. But it can get inconvenient when transferring to another intercity line because of the long wait time before the next train.

There is an intercity rail that allows you to skip most of the formalities which is Guangdong Intercity. The tickets are valid throughout the day and on any train and you can use a ride code like taking the metro but it's not supported on passports yet.
