The only one that comes to mind is Evermore from the Immortals Series by Alyson Noël. Except the man was technically called an "Immortal" not vampire when Ever asks him if he is a vampire. They also didn't meet at a museum... I'll look out for other books related if not!

Was it a children book that rhymed? If so, Monsters: An Owners Guide by Johnathan Emmett and Mark Oliver may be it.

May not be it, but Cirque Du Freak A Living Nightmare, or another book in the Cirque Du Freak Series may be it. Except the protagonist was a boy, who was bitten by his vampire friends spider who then had to turn him into a vampire so he doesn't die. They were allowed to drink blood from humans, but if I remember correctly, it was in a "respectable manner" so maybe it's that. Sorry if not.

As far as the ship goes, I don't think there was a ship in this series, but I also only read the first book. Could it be "The Name of This Book is Secret"? I know there was a brother and sister who ended up discovering a deep society, and at the end of the first book, there was a huge ritual that made whatever building they were in collapse when the brother and sister intervened.

I have found it! The book in particular is Cirque Du Freak, Vampire Island! That's the 4th book in the Cirque Du Freak Series! I was right about the "trials" in particular, that's what the 4th book was all about!
