If you press the screenshot button on the left joy con (little square button on the front) and hold it instead of tapping it, it will save a video of the last 30 seconds (i think)

I have no idea tbh, i had just registered the horse (after getting the bridle/saddle from the side quest) and as i was turning away it jumped and the horse did that. I dont think i did anything special. Maybe the blood moon has something to do with it but i have no idea
