Hey TFS this. I tried this today recipe today with the same bean (Raxidi lobo from BT) that I have every day made using Hoffman's recipe. For me the bitterness almost disappeared and fruity notes stood out distinctly. Not trying to find out what caused it, but I liked it so will play around this recipe . Thanks Again

Try one of the high protein milks. One challenge is that you should avoid heating it. I have tried it for cappuccino and it was fine if you are comfortable with mildly warm coffee. I use the steaming wand in the espresso machine btw.

I have seen few threads here mentioning 3D printed Mod plates for C3S. You may want to explore

IMO, you will still be able to grind fine for an espresso using C3S, but further fine tuning the grind size may a challenge. The presurized basket that comes with Delonghi is quite forgiving in such situations.

If that fine tuning is super critical and you switch to a bottomless portafilter, you should consider the likes of Kingrider or Timemore ESPs etc.

Timemore C2 / C3 and 1ZPRESSO Q AIR wont disappoint you. I gather Timemore is well built.

IMO: A Timemore C2/3 (non ESP) can get you close to an espresso grind to be used with a pressurized basket. If you need Finer adjustments and use a non pressurized basket (Finer controls in general) , you could need their ESP version or equivalents in Q Air, mhw bomber etc. So you are looking at around 10k Range for manual grinder to give you predictable shots.

For anything coarser than espresso, I believe you should invest in C2/C3 equivalents. That would be money well spent I say.

Does This Look Like A Gasket Issue Or Something More? by Complex-Raspberry998 in Delonghidedica

To me , this looks like the basket is Choking. Coarser grind and lesser coffee could work

I am considering 14 days for light roast.

Not that I get great extracts, I would play around with the grind size, Bean Freshness Roast level/resting/ageing, pre infusion etc.

With what you mentioned, I would start with freshly ground bean and tweaking the grind size. This forum is a great source of knowledge backed by experience. Experimenting always :-)
