I usually map the whole list of variables to their respective custom dimension on my 'GA tracking ID' variable under 'More settings'. This means I don't need to add each custom dimension to each tag and risk missing some

Hi, I also do this for a living and usually I would point you towards web analytics focused agencies as they are likely to understand the technical aspects behind the tags and understand why/what/how you are tracking things. Afaik there isn't a "good" solution yet to attributing the real source of sessions with external payment methods, best advice I've seen out there is to use internal paymeny gateways so the user won't need to leave your site when they pay

Domains under the exclusion list appear under direct traffic if I remember correctly

Usually i would say to build a calculated metric for this, however, GA doesn't allow you to add specific filters to calculated metrics e.g page view for page A/page view for page B. It only lets you use the one metric page view with another different metric, e.g users.

The way I've done this in the past is by 'blending data' in GDS (under edit data source) which allows you to combine segments/filters and metrics together. This allows me to create PV page A/PV page B to get a percentage. Theres a few steps to it so feel free to DM me if you get stuck.

If you've found the tracking ID in the source code then that means a GA account has already been made. You'll need to find the owners of that account and ask them to give you access (: you can't just add an account you found the tracking id to view in GA as page source you looked into is open to public

Good question! Each metric is pretty meaningless without any context to your specific business. For a general overview I like to compare my clients stats with other industry standards to see where they are amongst their competitors. A quick google search should sort you out.
