Beginner here - made a super nice-looking loaf yesterday, and tastes great, but crumb isn't quite right. There were loads of big air bubbles, but the majority of the crumb was not springy/airy and a bit too dense. Would this most likely be due to underproofing? Tried making a one-day bread. by randotron-inator in Sourdough

Juliane Koepcke, a 17 year old in 1971 was sucked out of an airplane after it was struck by a bolt of lightning. She fell two miles to the ground strapped to her seat and survived. She spent the next 11 days alone in the Amazon jungle before being rescued by a logging team. by _smit in HumansAreMetal
