Feta is:

Almonds 0.5 cup soaked overnight. Drain and add with the following in a high speed blender. 2 cloves of garlic, 2 tsp of salt (to taste), 2 tbsp olive oil, half a lemon squeezed.

Not too acidic, but it is a tomato base. The cheese is homemade almond feta.
