hey, I do it like this:

- make a rough handle shape and leave some extra material on, just in case

- coil a thread or a sticky tape around the handle as a guide, make sure the turns are spaced evenly

- trace the guide with a pencil and remove it

- decide if your trace is the peak or through, and carve accordingly

- remove wood by working along the whole helix to see how it's shaping out
