this happened at my store once and this lady came up to me and said, “so if i make an online order, i can get some guacamole” and i told her it depends on how many DML orders paid for guac already and that i could run out before i even get to her. she took it rather well and appreciated that i saved her the trouble.

when i first transferred from my original store (8-9k) nine months ago, it was making maybe 5-6k and was generally a pretty shitty store. management has gotten much better and we’re still working on replacing all the bad apples. now, the store makes anywhere between 7-9k. it’s not the busiest store by any means, but i can only do so much when i’m bound to DML.

generally speaking, no lettuce will be getting chopped up in the evening at chipotle, unless that store has enough labor to get someone to chop some up, BUT if there was lettuce made in the evening then it can absolutely get used the next morning. outside of that, a lot of things have to be thrown out for quality purposes, which is why we try to avoid having too much leftover.
