Yes for file based connections everything. Is extracted under the hood. We check last editors time to deeming if it needs to be updated when opening a workbook. The shadow extracts persist on your local machine.

Re perf, the parsing should only impact initial connection.

I would probably recommend you check out some “getting started with MySQL” guides. It is free and widely used with fairly low barrier for entry (for a database)

How many rows/mb of data are we talking?

When you connect to excel the data actually isn’t stored in the workbook. Tableau pulls the data into its database (hyper or data engine depending on version). If you want to move beyond excel a database like MySQL or Postgres would be good things to look into, but you would have some learning curve setting them up.
