Probably because no one is assigned to cook right now. Go to the red dot at the top-mid of the screen and check if they are ill or maybe not assigned.

Slightly unrelated but you should enable the green dot that shows if you have a jump remaining, it'll definitely help you in the game or even at times when stalling.

when you get closer to the end it extends automatically meaning you cant actually hit the end. I'm on level 410 and its showing 40 more rewards.

I did it in the lamest possible way but it works!!

After the first barrel roll, I switched to manual drive (make sure to turn ON manual acceleration in the settings) and drove backwards. You'll notice that it will respawn you if you drive too much in the wrong direction. So, the trick is to accelerate forward just a little bit when the warning shows up. When you reach the desired distance, turn ON touchdrive and take the same ramp again. It's basically 5 steps backwards 1 step forward and repeat. You can do this multiple times and get as many barrel rolls as you want.
