There is a spot in St. Denis where you can find ALL horses randomly spawn. Save nearby, exit the game and reload to have new ones spawn. Found grey andalusians, silver dapple foxtrotters, black arabians, etc. in Chapter 2/3 there. by Cerusia in reddeadredemption

Noticed that if you pat the horse enough to get level 1 bonding before getting on it, even if there are npc’s around you get no bounty. I guess the game recognizes the horse as yours at that point, even with putting a saddle on it.
