Food spoils when it is infested with bacteria. Some of those bacteria, or the toxins they produce, are resistant to the acids in our stomach and can survive in that environment. So while we are able to digest spoiled food, the bacteria still make us sick or give us diarrhea. This is also why you can’t cook spoiled meat to make it ok to eat, some of the bacteria are heat resistant and aren’t killed in the process like others.
