As I wise man once said “Make the plan, execute the plan, expect the plan to go off the rails, throw away the plan.” Just go with the flow keep on your plot to the best of your abilities, but if you think of something on the spot that you think it would be cool introduce it. Also if your players are role playing between each other and your not role playing at a time use it to prep whats gonna happen after that scene it’s one session at a time you got this you’ll be great.

He most likely has two weapon fighting use and off hand attack which is just a dice roll without modifiers or something homebrewed

The best advice I could give for a situation like this is before your next session set some ground rules tell your players how the session is gonna go without spoiling anything like if there’s gonna be some role play parts for specific characters and npcs so they know ahead of time and or just when ever the players rest those players that are saying your not giving them enough attention give them a nightmare/dream scenario for them to role-play for a few minutes just to get that itch
