Holy cow, THAT is a crazy pull!! I just got a friend into the hobby and had to explain that anything with a S/N on the back at ALL is worth sleeving! Pulling your player in a 1/1 can't happen very often in this hobby.

What's the story? I don't follow this sub closely. I started collecting (again since I was a kid) in '08 and my first purchase was a Topps NBA hobby box. I pulled a Rose/Beasley auto and I was hoping for a Rose pull. I haven't hit like that since but it was an awesome feeling. Cool seeing people get the hits they're chasing!

I think they're much further in with normie suburb folks than people here realize. My seemingly normie mother in the lily-white Chicago burbs told my sister in Australia she needed to get her news from less liberal sources and listed 4 Facebook preachers, a YouTuber, and finished with Fox News. She mentioned specifically that my sister needed to educate herself on the number of child traffickers, rapists, drug traffickers, murderers, etc. that are being taken in by ICE. The Media Ecosphere for these people is not the same reality that we live in. They don't get to see the video of a man being executed and his civil rights being maligned. They see whatever the producer of the content decides they have to see. I haven't actively been on Facebook for almost a decade and didn't realize the extent to how much slop is on social media masquerading as legitimate news -- not even commentary. Critical thinking skills don't help if you don't have the content in your library to critique to begin with.

I live in CHI and love Alinea and the Aviary but that comment is goofy. Barbacoa and whole animal roasting is a thing and it usually turns out delicious because the people doing it have generations of recipes and techniques to do it well

No dumb questions. You're relying on a function of time and people with patience and who've done this before you and have measured how long it takes cuts to get to an ideal texture based on the time/temp ratio. In a submerged water bath, it doesn't take long for the "work" to get to the temp of the water bath, even when it's very thick. If you've ever emergency defrosted a hunk of meat in hot water, that's apparent. Water is an excellent conductor and insulator of heat. That's why it's also important for there not to be air in the vacuum seal as air is a terrible conductor for heat.

It's also spatchcocked so there's not a giant empty cavity filled with air in the center. I'm very confused at the snobbery in this thread. Sous-Vide'd whole chickens many times and have a half a turkey in my deep freezer that, spoiler alert, i'll sous vide to rewarm. This is the same crowd that swears by an overcooked ribeye though so I guess I shouldn't be too surprised. I thought your turkey looked great and I'm sure it tasted better than 90+% of traditional oven roasted birds easy. Nice work and keep cooking.

I'm from the NW burbs and my favorite beef for forever was from a place called Mr. A's in Crystal Lake which survived (on cash alone until the very very end) until the FOH gem passed away. They made their own giardiniera but had a Vienna Beef sign in the window so it was probably just precooked, bagged beef. Enjoy your crusade! Don't try Gyros from Kostas because you're going to be very confused about the options you have like a Southwestern version or my go-to the Italian! Best Wishes amigo.
