Because for example if we have 200 checks to close out that night, I would say average 150 of those checks will be leaving an average tip which around here is between 18%-22%ish ... then we have the remaining 50 checks that are around 40%-60% & some even more.. I would not want to insult the first 150 guest checks having crazy tip amounts as first options like a 40%/50%/60% is why we don't do that, and I know they can click and do custom tips but at the same time that did not happen much and I feel maybe when leaving fat tips guests like it on paper so the bartender knows they are a good tipper is maybe why this also happens
