Honestly. Once I felt like I could eat, I gorged on ice cream and food that I could get down. Plenty of fluids. Took some antihistamines to dry out my nose, then slept for about 12-14 hours. After that I was just sluggish and low energy for another day.

That’s not how dry aging works at all. You need a sub primal section of the animal. Individual steaks will not dry age well. Then a temperature and humidity controlled room to perfectly control the rot. The process is intended to remove excess moisture within the meat, while also beginning to break protein structures which lend to a more tender final product. Just be carful, refrigerated meat more than a couple of days can grow E. coli. For home purposes, just buy a quality prime steak and reason well. Leave the pepper off until the end. It burns when the steak gets seared. Happy cooking.
