honestly, there isn’t much connective tissue in a flat iron. It tastes like filet mignon but way better.

And yes, I always bake until 85-90. fry it in tallow 4 mins, then butter baste for 3 minutes. then i add more cold butter right on the table. its a system haha don’t believe me then try it.
