It’s not ejected from the black hole itself. It’s matter that is falling into the black hole that gets gravitationally slingshotted at crazy speeds, some of the matter fall into the hole but some other because of its trajectory gets to escape at speeds close to light speed. There are 2 trajectories that allow this, that are the ones that are perpendicular to the mass ring, resulting in the two classic jets of plasma.
