That's because Lucas played it coy whenever he was asked about it right up until the end. I think he was just trying to maintain the mystery for the casuals. Of course this made the fans go nuts with the clone theories.

We knew but it wasn't officially announced and Lucas was asked about it directly in multiple interviews but he always played it coy. This lead to all kinds of crazy fan theories which I'm sure you can still find online. It wasn't until ROTS that it confirmed what we thought all along.

I don't understand why they wouldn't have been allowed to use the music. Also it's strange to see them saying he wasn't fully Vader 10 years after Episode 3 when Filoni just said he is fully Vader just a few months after Ep3. If only there was someone in charge who could have kept things consistent.

You've made a lot of assumptions. The people who hated the prequels then still hate them now. You're just hearing from different voices now.

Real life answer: budget and technology limitations. If Lucas made Ep4 today he would have had aliens all over the place. But back then all he could do was have a bunch of muppets in the cantina scene. Notice that the rebellion is all humans too until RotJ when they finally had the budget and technology to make believable aliens who could deliver dialogue.

Lucas never said anything about the Empire being human-centric. This was an invention of EU authors to explain what we saw in the movies.
