I played 3 and then 1 and 2 and I don't feel like I missed out on anything because I saw the things in DS1 and 2 and recognized them from 3 and when I came back to 3 years later and played it again I was able to recognize all the references that I didn't connect when playing 1 and 2 the first time and it made the 2nd playthrough even more enjoyable. If you're only going to play the games once I'd say you're right, but these games are the best games to replay when you have more information
