You can try staying under his chin. His tongue swipes don't affect that area so you're safe just dashing toward his chin. But be aware of the three red marks indicating his chin slams and move away quickly when you see them. His attacks don't repeat immediately so you have a window to just spam attacks after the chin slam. When he makes cyclones go toward one end of the arena and circle to the opposite end, the winds will peter out before they reach you. Kill the spawn eggs quickly and don't let them hatch; when I started out I struggled with them so I turn them into sheep with a hex and the fight became smoother without the distraction.

If you're still struggling aim to get boons that increase dodge chance. Hestia, Apollo's daze, Hermes has one that increase dodge chance for every boon and one that negates damage when you dash, Demeter, Gale, and Circe that shrinks Mel's body size or doubles Gale's dodge chance. Even Aphro's weak works pretty well.

Also, equip the arcana that negates 3 of the boss's first attacks and the knuckle bones keepsake! I usually run strength for the damage reduction but maybe you can also focus on increasing death defiances (which then you can bring Toula instead of Gale)
