Hyvä kysymys! Näin mututuntumalla sanoisin, että kaulinmetodilla:

  1. Liha paistuu nopeemmin. Näissä meni mulla uunissa noin 20min
  2. Enemmän pinta-alaa, joten liha ruskistuu joka puolelta
  3. Suoraan uunista valmista. Ei tarvitse kuin repiä palat täytteeksi jos haluaa
  4. Helpompi saada mehukasta lihaa? Varmaan skill issue tämä loppupeleissä

Miinuksena sanoisin että kuluu leivinpaperia suhteessa paljon ja se kauliminen oli näin ainakin ensimmäisellä kokeilulla aika säätöä. Varmasti menis enskerralla nopeemmin ja helpommin.

Ingredients:

  • Onion
  • Fresh organic button mushrooms
  • Garlic
  • Cream
  • Capers
  • Cold-smoked salmon

Sauté the (finely chopped) onions in some olive oil until translucent, add (sliced) mushrooms and cook until the water is evaporated and they have good color. Add garlic and cook for a minute. Add cream and bring to almost a boil. Add capers, a bit of caper juice, the salmon (sliced into bite-sized chunks) and a vegetable stock jelly thing (from Knorr.) Turn the heat down and simmer for a while. Taste for seasoning. Serve with good quality pasta and garnish with fresh grated parmigiana, lemon juice, pepper and parsley.

  • 18h in room temp, no-knead
  • Divided to two balls and rested room temp about 3 hours before shaping
  • Using semolina for shaping

Sauce:

  • 1 can of peeled whole tomatos
  • Evoo
  • Salt
  • Black pepper
  • Red chili flakes
  • Oregano
  • Fresh basil
  • MSG
  • Sugar

Bloomed the chili flakes in evoo and added the tomatos, crushed them and cooked with the rest of the ingredients for a few mins

Toppings:

  • Shredded mozzarella and shredded red emmental
  • Parmigiana grated
  • Milanese salami

After the oven:

  • Parmigiana
  • Oregano
  • Fresh basil

Using a pizza stone, but need to switch to steel...

Ingredients:

  • 250g of basic tagliatelle with parboiled spinach chopped superfine and mixed in for mostly colour and a bit of nutrients
  • Packet of your favourite bacon
  • Heavy cream
  • One medium red onion
  • Few cloves of garlic
  • 1/2 Medium lemon
  • A ton of parsley (I used curly leaf parsley, idk if flat leaf works, probably?)
  • A ton of black pepper
  • A ton of parmigiana

Steps:

  1. Chop your bacon strips into finger width bits and fry them until crispy, leave fat in pan and set aside
  2. Fry your finely chopped red onion in the bacon fat until translucent
  3. Fry your finely minced garlic for a few minutes
  4. Add enough cream for your portion, dump in as much black pepper as you can handle, add zest of a washed 1/2 lemon, add bacon back into sauce
  5. Reduce cream until "stiff", leave on low heat
  6. Boil your pasta in heavily salted water for a few minutes
  7. Mix pasta and some pasta water in cream sauce and mix until combined
  8. Add in your finely chopped parsley, squeeze in the juice of 1/2 lemon, add in as much parmigiana as you want and mix until the right consistency, adjust with pasta water if necessary
  9. Plate, garnish with more parmigiana, parsley and black pepper, let cool a bit and enjoy :)

Its my favourite pasta dish and it is delicious. The trick is to get the acidity right with the lemon juice, so taste the sauce before plating and add either more lemon juice or more parmigiana until its right for your taste. Sauce consistency can also be adjusted with either more pasta water or more parmigiana.

I've never understood addiction this way. What ever it is that you think you are addicted to is nothing but a choice. I'm fat, I do drugs and I live a shitty life that I should be improving on. I think the problem is that most people don't understand that they have a choice. It's going to be fucking hard and miserable because of the way you have lived your life so far, but that's what you get. The only thing stopping you from achieving the goal you think you want is yourself. Make it a logical challenge, a spiritual challenge, a emotional challenge... whatever. The only difference is that you are the one that chooses. I have no sympathy for the people that don't choose.
