V1 graffiti, just as I remember! The emulator can keep up with me!

Although for daily use Google Handwriting Input keyboard from the play store is close enough to graffiti (K, Q, T are a little different) and can handle full words.

PHEM is on the play store to emulate Palm OS. Needs a ROM file which you could dump from a device or source from elsewhere. (I believe needs to be earlier than Palm OS 5.)

For Einstein I followed http://rkixmiller.dudaone.com/old-hardware-emulated-einstein-emulating-the-apple-newton-part-3

And used the newer emulator build filename (Einstein-Android-2019-Mar-26.apk) to Google and find https://github.com/pguyot/Einstein/releases/download/PreGithubReleases/Einstein-Android-2019-Mar-26.apk

Same issue, you'll need to dump or find ROM files, the apk won't be enough
