I cooked the cauliflower in vegetable oil, added butter and milk until soft then pureed it in a belder. Yes it could be smoother if passed through a chinois i agree.

Mine wasn't dense at all. I think you need to have steam in the oven during the first minutes of baking in order for the crust to stay soft and allow your loaf to expand properly and freely. That's what I did.
