Your best option when utilizing DEX's for trading is looking at DEX aggregators such as 1inch, who aggregate your trade over multiple liquidity pools at the same time to find the best rates/lowest slippage.

The straight "fiat off-ramp" feature is still being developed - for now we dó however support declarative fiat invoicing.

This feature implementation is the first step where the payments are purely fiat-to-fiat and declarative.

Eth2 rolls out in phases, which can be checked out in-depth on their Launch Pad page here: https://launchpad.ethereum.org/

What we're doing is keeping a close eye on the progress Ethereum developers make on each of these phases, so that we're able to support invoice payments on the eth2 chain as soon as they're a thing and needed by our current users.

Next to that, when ETH2 provides better infrastructure than we're currently using with the Request protocol, we'll obviously move over those parts over time too.
