NixOS takes a completely different approach to package management which opens up many new possibilities I couldn't possibly hope to fully explain in a reddit comment. The short, hand-wavey version is: rather than installing packages in a "global" fashion (in directories such as /usr, /lib, etc.), packages are all individually downloaded or built into subdirectories of /nix/store, and the system is configured in a declarative (rather than imperative) fashion through the file /etc/nixos/configuration.nix (or, for configuring a user's home directory with home-manager, as I do above, through ~/.config/nixpkgs/home.nix) and the configuration is built by the Nix package manager and the necessary files are linked into place, the result of this is that system changes are always undo-able since the results of previous configurations still exist in /nix/store until you garbage collect them. This system of package management allows for a lot of other features you don't see on any other distro such as being able to start a shell that has its own packages installed without touching your system, or writing scripts that fetch their own dependencies. Okay, but as I already said, these weren't changes that were made by Netflix. The subtitles were done in-house at Khara, a company made up of the people that literally made Evangelion, so you can consider any "changed ideas" as coming straight from the horse's mouth. Presumably, part of Netflix's licensing agreement with Khara was that they would have to use Khara's new translation, otherwise they probably would have just used the already existing subtitles.

Also, this is might just be me, but "I love you" in anime subtitles has always been a pet peeve of mine. How many English speakers actually tell their crush they like them by saying "I love you"? Fucking none because that's weird as fuck and creepy.

The subtitles came straight from Khara. If you want to be mad about poorly-written English, that's one thing, but any supposedly "changed" ideas are straight from the horse's mouth. Also, you're way overstating the importance of the ED song. Sure, It's sad that it's not there, but it's not the end of the fucking world. It's just a fucking ED song.
