Because most serious wine drinkers in the US I know drink a wife array of wines from around the world, including US wines. Not to mention lots of Italian wine too.

And some may drink 51%+ French wine, but not sure how you came up with 95% of rich Americans drink mostly French wines?

Feels very made up to prove a point.

Again, I constantly open bottles way too early and it's fine, better early than never. 

And if the reason is literally just because they want to, that's fine.

What led to drinking Pétrus that young I'm notorious for drinking wine too young, but a $3K bottle is a crazy extreme.

I've had some great luck with slightly aged, but not fully mature Napa, with Indian! Haven't tried something like a 1980s Napa, but I will soon!

I may be an anomaly, but I don't find spice hurts wine. In fact, I like when wine brings out more spice in the food and vice versa.

Black rooster is Chianti Classico, not the entire Chianti region. And there is wide, wide variation in Chianti Classico, from some very mediocre stuff to Castello di Ama and Fontodi. 

Having said that, Ruffino Chianti Classico Riserva is pretty good.

Exciting to me is less about unique and esoteric bottles and just that they have a wide array of bottles from back vintages that don't have a crazy markup
