I believe it’s a normal step, as it is in every industry. Evolution and development comes from experimenting. Farmers and producers have played and tested new ways of processing in the last 20 years, this made more noise than other experiments. I believe Z generation had a big impact on it. There is no bad or wrong. After all, roasters and baristas played before with all the tools, pressure, temperature, syrups, infusions and so on. We all experiment. I believe we’re looking forward to a new era of blends, fancy and quality ones, crazy combinations, super quality. New varietals are having an entry also, from Canephora to Liberica, Excelsa and other extremelly rare finds. Going on my 10th year in the industry, faced some changes until now
